After the crappiest day yet of an especially craptacular week, I needed to take a deep breath and do something constructive. An old friend of my fella’s is in town for a conference, but I opted to be reclusive and do some cooking instead of joining them for sushi and socializing. After a stop at the market for some provisions, and with a vague craving for something earthy, sprightly, and colorful, I decided to make a pizza with chicken, avocado, scallions, grape tomatoes, goat cheese, and (sorry, Rog and Janet), cilantro.
A slice of pizza and some mesclun tossed with a quickie key lime vinaigrette leter, I’m feeling much better.
While I was chefing it up, I also made a batch of cilantro-lime-pine nut-asiago pesto to augment a future meal — perhaps some roasted halibut or some pasta this weekend.

Hey, the cilantro’s all right, really. Just a bit soapy. I can’t do the chicken, though. I mean, I can do the funky chicken, but it’s lunchtime and all. Anyway, the photo is stunning.
